As I see the mint come up out of my garden in the springtime, I always think, MOJITO!! I always think about it because it’s the only thing I use the mint for. Last night I made my first of the season and it was pretty DARN refreshing!
You will need:
About 20 mint leaves (some extra for garnish)
1/4 cup sugar
16 ounces of seltzer or sparkling water
The juice of 9 limes and 1 sliced for garnish
1 cup of Rum
Instructions:
In a pitcher, muddle the mint and sugar together with a wooden spoon. Next add the lime juice and rum and mix well. Then add the seltzer or sparkling water and stir gently. Get a short glass filled with ice. Pour over the ice and garnish with a lime and some mint leaves.
This drink can be modified to your liking. If you want it sweeter, add more sugar. If you want it stronger, add more Rum. Anything goes!
