This series is devoted to products that we love…  Never mind that we aren’t getting paid to promote them!

First up:  Emeril’s Essence.

At the beginning of the week, I will take a whole family size pack of boneless chicken breasts, and throw them under the broiler after drizzling them with a little olive oil and generously coating them with this delightful seasoning blend.  Generally, 14 minutes under the broiler (8 minutes on the first side 6 on the second) yields a perfectly cooked chicken breast, unless you are dealing with a super voluptuous chicken, that is.

Once out of the oven, I let them sit for 10 minutes or so, and then slice it all up.  I divide it into smaller portions and stick them either in the fridge or freezer depending on what’s going on that week.

My husband brings some to work for lunches, I eat it for lunch over salad, or as a sandwich.  If we have a particularly busy day I will pull some out for a quick dinner, either in a wrap with some lettuce, cheese, salsa and sour cream for the kids, or with rice and veggie if that’s what we have.  It’s also makes a mean chicken caesar salad, or is a great addition to macaroni and broccoli.

The possibilities are endless, and it’s right there when you need it- a healthy way to add protein to any meal.

(It’s also really delicious on shrimp too!)

And best of all, for 10 minutes of effort, it’s much cheaper than the pre-cooked, pre-seasoned chicken you buy in the store, you don’t have to worry about preservatives, and it tastes a lot better too!!
