Roasted Asparagus Salad with Fried Eggs, Parmesan and Carmelized Candy Onions

This recipe uses a bunch of different farm share ingredients.  It may sound a little strange, but IT IS DELICIOUS! If you try it, you will NOT be disappointed.

The runny egg yolks are the perfect compliment to the asparagus.  It’s a light, quick and healthy dinner perfect for the summer or anytime!

In fact, my husband says he would eat it every night if he could.

 

 

 

Here is what you will need:

 (Serves 2)

 

About 10 Asparagus stalks

Red or green leaf lettuce

4 eggs

1/4 to 1/2 cup shredded parmesan cheese

2 Candy onions (or leeks) white and light green parts only, sliced thin vertically

Balsamic Vinegar

Olive oil

Salt and pepper

Instructions:

Step 1:    Snap off the ends of the asparagus, (you can peel them if you wish, but it isn’t necessary) drizzle them with a little bit of olive oil, season with salt and pepper and put under the broiler for about 4 minutes, turning once. Remove from the oven and let cool slightly.

 

 

Step 2:    Place sliced candy onions (or leeks) in a large pan with a little bit of olive oil and saute over medium heat until golden brown and carmelized- about 10-15 minutes.

 

 

Step 3:  In a nonstick pan, melt some butter, and fry eggs gently to over easy.  You want the yolks to be runny.

 

Step 4:  Arrange some lettuce leaves on 2 plates, season with salt and pepper and drizzle with a little olive oil and balsamic vinegar.  Put the asparagus on top of that, then the eggs, parmesan cheese and finally the carmelized onions.  Season with Salt and pepper and ENJOY!!

  1. This sounds delicious! I will definitely have to try it! I have been loving the asparagus! But, here is the challenge of the week…..kohlrabi???? What the heck is that and what do you do with it???? I am not even sure what part of it to use??lol….going to do a google search right now:-)

    • I agree! I have it sitting on my counter right now, and that is why I got on the computer!! To figure out how to use the kholrabi!! Let us know what you end up doing with it, and we’ll let you know how we use it!!
