Grilled Pizza

Grilled Pizza is a fun summer dinner.  The kids love it and the possibilities are endless.  It can also be a great way to use up leftovers you may have in the fridge.  You can use your own recipe for dough, or a store bought dough.  (You can usually find it at your local grocery store either in the refrigerator or freezer section.)


All you have to do is roll out the dough on a lightly floured surface (I am not trying to be a pizza tossing hero- I use a rolling pin and it accomplishes the same thing)  to about a 13 inch round.  YOU WILL NEED A PIZZA PEEL.  I have attempted to make pizza without one- both in the oven and on the grill and it almost never works.  You can find a cheap peel at a store like Bed Bath and Beyond for about $10.


Brush one side of the dough and slap it on a preheated grill over medium heat.  Allow it to cook on one side for 2-3 minutes.  Flip and top it with whatever you want. Close the grill and cook 5 minutes more, until cheese is melted and sauce is bubbly.

Grilled Vegetable Pizza

Sauce, Fresh Mozzarella, your choice grilled vegetables- I used zucchini and yellow squash, red onion, and marinated artichokes




Arugula Pie

For this one, start with sauce and fresh mozzarella.  Once the cheese is melted, remove the pie from the grill and then top with chopped proscuitto, fresh arugula leaves, shaved parmesan and drizzle with balsamic vinegar (or the crema if you have it.) Top with salt and pepper and serve immediately.
