Fresh Tuna Tacos with Bean and Avocado Salsa

This Bean and Avocado Salsa started off as a family favorite appetizer.  I usually make it and just serve it with chips before a meal.

 

Here, I use it on tacos using grilled,  fresh tuna steaks.

 

FOR THE SALSA:

 

1 can black beans, drained and rinsed

1 cup chopped tomato

1/2 cup finely chopped red onion

1/4 cup chopped cilantro

2 ripe avocadoes, diced

1 tbsp fresh lime juice

2 tbsp white balsamic vinegar

2 tbsp extra virgin olive oil

salt and pepper to taste

 

Combine all ingredients (except for avocado) and let sit for at least one hour, or overnight.  Add avocado right before serving.  Serve with chips as an appetizer, or with tacos as a topping.

 

FOR THE TACOS:

 

Place the tuna steaks (1-1.5 lbs serves 4-6) in a large ziploc bag with 2 Tbsp chili powder, juice of 2 limes, salt and pepper, and olive oil and let marinate for a few hours.  Grill as desired.  We like to sear them for only a couple of minutes on each side.  This yeilds RARE tuna.

 

Once the tuna is cooked, dice it up and serve it on flour tortillas, the bean and avocado salsa and some sour cream.

 

Perfection!
