Farm Sharing:   Watermelon and Feta Salad with Walnuts

Every Tuesday when I get my farm share my first thought is always, “What to do with all this lettuce!”  Don’t get me wrong, I love me some lettuce but, each week we are getting 2 to 3 at a time.  Last week I made this salad during my Mom’s visit from Florida, and it was a HIT! It is a refreshing and delicious way to use those greens!

You will need:

1  head or bag of your favorite lettuce

1/4-1/2  of a seedless watermelon, cubed (depending on the size of the watermelon)

1/4-1/2 cup of crumbled Feta Cheese

10 basil leaves cut into strips

1/4 cup of toasted walnut pieces

For the Vinaigrette:

1/2 cup of red wine vinegar

3/4 cup of canola oil

3 tbsp sugar

1 tbsp salt

1 tsp pepper

1 large clove of garlic minced

Put all of these ingredients into a mason jar or cruet and shake well and set aside.  The dressing tastes better the longer it sits.

Instructions for the Salad:

In a large bowl, add the lettuce, watermelon, basil and Feta cheese and toss well.  When you are ready to serve, dress your salad, toss and add the toasted walnut pieces on top.

 Serve and Enjoy!!
