Curry Chicken Salad

My friend Annette always treats me to a curry chicken salad sandwich and a smiley :)  face cookie from the general store in Tewksbury whenever I go to her house.  It is such a delicious sandwich!  I order it on Rye bread with lettuce and tomato.  It is definitely a lunch I look forward to!

  I decided to try my hand at replicating it and I came pretty darn close!  In this case I made it as an appetizer but it can easily be made into a sandwich as well.

You Will Need:

2 large chicken breasts on the bone (roasted @ 350 for 35 minutes) or a rotisserie chicken from your local market

1/2 cup of celery chopped small

1/3 cup of red onion chopped small

1/4 cup of dried cranberries

1/3 cup of red seedless grapes halved

1/4-1/2 cup of mayo

1 tbsp of yellow curry powder

salt and pepper

 2 bunches of endive

your favorite crackers

 

Instructions:

Shred the chicken and put it into a bowl.

 Combine the chicken, celery, onion, cranberries, mayo and curry powder.  Taste to see if it needs salt.  Add salt if needed.  Add pepper. Fold in the grapes.

 If you want to be fancy, put 1 tablespoon at the bottom of each endive leaf as shown.  Serve with your favorite crackers or as a sandwich.  This recipe will make 4 sandwiches.
