Creamy White Bean Soup

 Nothing says Fall is here like a big pot of soup on the stove.  This soup is so easy and delicious even my 8 year old licks the bowl clean!


You will need:

3 Cans of white beans

1 Bunch of scallions chopped

1 Large onion diced

3 Cloves of garlic minced

3 Sage leaves chopped

1/4 Cup of olive oil

1/2 Stick of butter

1 Cup of cream

1 Carton of chicken stock

Salt and Pepper


In a large pot or dutch oven melt the butter and olive oil.  Add the scallions, onions, a pinch of salt and a pinch of pepper and saute until soft.  Add the garlic and saute for 1 minute.

 Drain 2 cans of beans and add to the pot.  Cook for 15 minutes.  Use an immersion blender, blender or food processor to blend the bean and onion mixture.  Return the blended mixture to the pot.

 Add the last can of drained beans, sage and 2 cups of the chicken stock to the pot.  Stir and simmer for 15 minutes.  At the very end add the cream and bring up to a slow simmer.  Add salt and pepper to taste.  If you prefer a thinner soup you can add more stock.  (For a lighter option you can omit the cream)
